Lentil Soup
- 2 medium onions, diced
- 2 ribs celery, diced
- 2 Tbsp olive oil
- 2 cloves garlic, peeled
- 6 cups vegetable broth
- 3 cups water
- 1 lb dry lentils
- 1 cup chopped carrots
- 2 Tbsp tomato paste
- 1 bay leaf
- 1 tsp ground cumin
- 1/2 tsp cayenne pepper
- 1 lb veggie hot dogs, sliced (optional)
- 1/2 lb baby spinach leaves
- Salt & pepper to taste
Saute onions and celery in oil; press in garlic. Add stock, carrots, seasonings, tomato paste and lentils that have been soaking in water at least 20 minutes. Simmer slowly for about 2 hours, adding veggie dogs about 20 minutes before serving time. A few minutes before serving, adjust seasonings and stir in spinach leaves, allowing them to wilt. Makes 8-10 servings.
