Mint Chocolate Chip Cookies

In a large bowl, mix together sugar, oil, vanilla, peppermint, applesauce and soymilk. Sift together dry ingredients. Add to wet ingredients along with chocolate chips, mixing just until combined. Drop by spoonfuls onto baking sheets, about 2 inches apart.
Bake in preheated 350 degree oven 10-11 minutes. Remove from oven and leave on baking sheet for 3 minutes, then transfer to wire cooling rack. Makes about 4 dozen.
