Ma's old farm recipe, minus the Jimmy Dean.
Combine cornmeal, salt and cold water in a large pot. Stir in boiling water. Cook over medium heat until thick, stirring frequently. Cover, reduce heat and cook 5-10 minutes more. Stir in sausage and scallions. Cool to room temperature. Pour into 2 loaf pans that have been lined with waxed paper. Chill overnight.
Unmold from loaf pans* and cut into 1/2-inch slices. Fry on a hot, lightly oiled griddle about 10 minutes per side, or until golden brown and a little crispy. Serves 8-10.
*Do not despair if the cornmeal has not set up firmly enough to make nice slices. Some kinds of cornmeal aren't as starchy as others. Leave the batter in the pan and scoop by spoonfuls onto the hot griddle. It will cook up just like pancakes and be just as tasty.
