Sweet Potato Salad
Adapted from Moosewood Restaurant Low-Fat Favorites
- 2 large sweet potatoes, peeled and 1/2-inch cubed
- 1/2 red bell pepper, chopped fine
- 3/4 cup celery, chopped fine
- 2 Tbsp. minced red onion
- 1 batch dressing (options to follow)
Steam the sweet potatoes just until tender but firm. Allow to cool. Combine with dressing and chopped veggies. Chill at least 1 hour to allow flavors to absorb.
Curried Mango Dressing
- 6 oz. plain soy yogurt
- 3 Tbsp. prepared mango chutney
- 1 tsp. curry powder
- 2 tsp. minced red onion
- 1 Tbsp. fresh lime juice
Cilantro Lime Dressing
- 6 oz. plain soy yogurt
- 1 Tbsp. minced fresh cilantro
- 1 Tbsp. minced scallions
- 2 tsp. fresh lime juice
- salt to taste
