Banana Bread

Cream margarine with sugar; add bananas. Combine soymilk/vinegar and prepared egg replacer. Sift together dry ingredients, nuts and flaxseed. Mix a third of dry ingredients into banana mixture, then half the liquid, then another third of dry, then remaining liquid, then remaining dry. Stir in chocolate morsels. Spoon into two oiled loaf pans (4 x 8.5 x 2.75"). Bake at 350 degrees about 50-60 minutes (until skewer tests clean).

Alternate baking method: bake about 15 minutes in mini muffin tins. Makes 4 dozen.
