Chocolate Chip Cookies

Cookies without butter? I had my doubts when I read this recipe, and even more when I started baking up a batch. The dough was so oily, I thought they'd never hold together. But guess what, they came out of the oven looking perfect, and the kids gobbled them down the same as the buttery eggy ones I used to bake. Note the placement in the "treats" section — this is not health food :-)

Combine flour, soda and salt. In a large bowl, mix together brown sugar, maple syrup, corn oil, egg replacer and vanilla. Add remaining ingredients in two parts, mixing just until combined. Drop by spoonfuls onto baking sheets, about 2 inches apart. Bake in preheated 350-degree oven about 15-18 minutes until lightly browned.
