Fantastic French Toast

Adapted from Vive le Vegan! by Dreena Burton

This is the first vegan French toast Gillie hasn't rejected. In fact, she thinks it's delicious!

Puree everything but the bread in a blender, then pour into a bowl. Dip bread slices and fry on preheated, oiled griddle. Coating will tend to frizzle up and slide away from the bread. Allow it to set a bit before gently scraping it back up against the bread. Cook for 4-6 minutes on each side until nicely browned.

Makes 3-4 servings.
