Peanut Better Cookies

Adapted from Vive le vegan! : Simple Delectable Recipes for the Everyday Vegan Family by Dreena Burton

Sift together dry ingredients. In a large bowl, mix together peanut butter, maple syrup, oil, molasses and vanilla. Mix wet and dry ingredients just until combined. Drop by spoonfuls onto baking sheets, about 2 inches apart. Flatten slightly with tines of a wet fork.

Bake in preheated 350 degree oven about 11-12 minutes until lightly browned. Remove from oven and allow to cool one minute on baking sheet before transferring to wire cooling rack.

Makes about 3 dozen.
